Pizza Zucchini Boats

4 fresh zucchini
Pizza sauce
2 cups cheese of your choice (some options are Parmesan, Gruyere, Mozzarella)
Seasonings (parsley, oregano, red chili flakes, Italian)


1. Cut the zucchini lengthwise. Use a spoon to scoop out the seeds from the center of each zucchini half. Place the zucchini boats side by side on a baking dish and make sure the dish is coated with cooking spray.

2. Spoon pizza sauce into each of the zucchini boats, and top with freshly grated cheese. Add pinches of salt and pepper to each individual boat, and top with any other seasonings of your choice.

3. Preheat the oven to 400 degrees Fahrenheit, and bake for 8-10 minutes.

Homemade Baked Falafel Balls

2 cans organic garbanzo beans
1/2 cup small sweet onion, finely chopped
4 cloves fresh garlic, finely chopped
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
3/4 teaspoon salt
3/4 cup cilantro OR parsley, finely chopped
2 teaspoons olive oil
2 tablespoons whole wheat flour
1/2 cup breadcrumbs


1. Grind chickpeas and garlic until a coarse paste is created (no need to add water in this step). Then mix in all other listed ingredients except for the breadcrumbs.

2. Create balls with the mixture; feel free to decide for yourself what size falafel rounds would best work for your purposes. Take each individual round and roll it in a bowl of breadcrumbs so that it is evenly and generously coated.

3. Arrange falafel rounds onto a baking sheet. Spray the rounds generously with cooking spray for better baking.

4. Preheat the oven to 400 degrees Fahrenheit. Bake rounds for 20 minutes. Then turn the balls over and bake for another 10-15 minutes to ensure ideal crispiness all around. Let cool for 5 minutes before serving.
